Ingredients:
enough beets to fill a 32 ounce jar, peeled, sliced and quartered
1 1/2 cup apple cider vinegar
1 1/2 cup water
4.5 tbs coconut sugar
1 tsp salt
1 tbs black peppercorns
Directions:
Put beets into jar
Pout vinegar, water, sugar, salt, and peppercorns into pot and bring to boil then lower temp until sugar has dissolved.
Let brine cool a bit and then pour it into jar to the top.
Let mixture cool to room temperature then put lid on and store in fridge.
Should be ready within a few hours or overnight.
