Raw Pickled Beets



Ingredients:

  • enough beets to fill a 32 ounce jar, peeled, sliced and quartered

  • 1 1/2 cup apple cider vinegar

  • 1 1/2 cup water

  • 4.5 tbs coconut sugar

  • 1 tsp salt

  • 1 tbs black peppercorns


Directions:

  1. Put beets into jar

  2. Pout vinegar, water, sugar, salt, and peppercorns into pot and bring to boil then lower temp until sugar has dissolved.

  3. Let brine cool a bit and then pour it into jar to the top.

  4. Let mixture cool to room temperature then put lid on and store in fridge.

  5. Should be ready within a few hours or overnight.

  6. Enjoy
