Kale, Radish, Green Apple & Chicken Salad w/ Tahini Coconut Amino Dressing

This salad is anti-candida diet friendly and so good! The creamy tahini dressing makes it a delicious and hearty meal.



Ingredients:

Salad:

  • 3 cups chopped curly kale

  • 3 radishes thinly sliced

  • 1 half green apple chopped

  • 1 half avocado cubed

  • 1 cup shredded chicken

  • 1/4 cup fermented red onion

  • 1 tsp flaxseed

  • 1/4 cup cooked quinoa

  • 1 tbs chopped mint

Dressing:

  • 2 tbs organic tahini

  • 1 tsp coconut aminos

  • juice from half a lemon

  • 1 tbs olive oil

  • 1 tsp fermented red onion brine - optional


Directions:

  1. Mix dressing in bowl that will hold salad.

  2. Throw in kale and massage kale with dressing.

  3. Throw all other salad ingredients into the bowl except for avocado.

  4. Place avocado on top once salad is mixed.

  5. Enjoy!
