Pickled Red Onion & Ginger Chimichurri



Ingredients:

  • 2 cloves garlic

  • 1/3 cup pickled red onion

  • 1/4 cup pickled ginger

  • 1 small bunch of parsley - if large adjust ingredients to your liking

  • 1 tbs dried oregano

  • 3/4 cup olive oil (add more as needed)

  • 1/3 cup pickled red onion brine (brine from my pickled red onion recipe - sweeter brine) - if you don't want to use brine use 1/3 cup red wine vinegar + 1 tbs honey

  • 1 tsp salt

  • 1/2 tsp pepper


Directions:

  1. Add garlic, pickled onion, pickled ginger, oregano and parsley to food processor and process until finally chopped. Don't over blend.

  2. Add olive oil, brine, salt and pepper and mix. Add more olive oil as needed. It should be easily pourable.

  3. Eat with steak, chicken, shrimp, veggies, etc.

  4. Enjoy!
